IL FORNO A Synergy of Fresh Ingredients & Centuries Old Traditions

"Il Forno" means simply, The Oven.

Il Forno uses three main ingredients to achieve its alchemy of pizza magic- Caputo "00" flour imported from Italy, Homemade Marinara sauce with Tuscan tomatoes and Fior di Latte mozzarella. Serving wood-fired pizza with the soul of Neapolitan tradition in every delicious slice.

Egidio "Egi" Franciosa

Owner & Chef
Egi was raised in Mondragone, thirty minutes from Naples, Italy- the birthplace of pizza. Egi's love of food began in "la cucina della nonna" his grandmother's kitchen, where delicious Italian meals were cooked from scratch. In 2010, Egi moved to California and found his first culinary mentor in chef Saverio Posarelli who encouraged him to refine his natural talent for Neapolitan style pizza. Destiny pushed Egi to the highly esteemed Cecconi's in West Hollywood which offered the opportunity to perfect his acclaimed pizza dough and rising technique. Opportunity knocked again in 2014 when Egi was recruited by chef Paolo Tramonto at Bella Napoli in the one and only Music City. Il Forno was born out of Egi's dream of sharing Italy's most famous "street food" with the people of Nashville.

Nomad at heart, Jannah settled near Lake Como as a young adult and discovered the beauty of seasonal Italian cuisine. Her passion for fresh, authentic Italian food fuels her labor of love and co-creation, Il Forno. A native of Southern California, Jannah eventually returned to the United States with her husband, Egi, after ten years as an American Expatriate in Europe. Her experience in Italy infuses every choice Il Forno takes- from menu selection, commitment to high quality, fresh ingredients to design elements. Ultimately, Jannah hopes to offer Il Forno's customers a culinary journey from Naples to Nashville without the jet lag! Buon Appetito!

Momo The Oven

Egi and Jannah spent countless hours researching wood-burning ovens. When they came across Forno Piombo, it was love at first sight. Named after the Franciosa Family's moniker- Momo- the oven, hand built by the Piombo family in Napa Valley, weighs just over 3,000 pounds and can reach upwards of 900 degrees. Fueled by local Tennessee Oak, Momo cooks each delicious pizza in less than two minutes.


We are delighted to provide catering for your next private event. From weddings to birthdays, office parties, corporate events and more. Our elegant customized trailer is a fantastic addition to any party! Your guests will enjoy the charm of the hand built brick oven as well as the mouth watering delights Il Forno offers.
